Sweet Chilli Sauce Print E-mail

Makes: LOTS!!!

Ingredients:

  • 2 kg sugar.
  • 1.2 Litres cider vinegar.
  • juice and zest of 2 limes
  • 500 gms fresh seeded chillies.
  • 4 red peppers
  • 4 red onions
  • 4 teaspoon tomato paste
  • 100 gms garlic.100 gms fresh ginger.
  • 1 teaspoon salt.
  • 2 teaspoons virgin olive oil

Directions :
Slice the garlic, ginger, onions and peppers,

put the oil in a (very) deep sauce pan and heat until nearly smoking,

add one at a time stirring for a minute between each:

  • garlic
  • chillies
  • onions
  • red peppers
  • ginger.

Add 500mls of cider vinegar and the tomato paste and bring to the boil,

put a lid on the pan and remove from heat

allow to sit for 20 minutes.

Put this mix in a blender and blend until smooth

return the mix to the pot and add

  • add the lime zest and juice
  • the remaining vinegar
  • sugar
  • salt

Bring the mix to the boil and then lower to a simmer for 30 minutes

Find lots of jars to put it in!
