Makes: LOTS!!!
Ingredients:
- 2 kg sugar.
- 1.2 Litres cider vinegar.
- juice and zest of 2 limes
- 500 gms fresh seeded chillies.
- 4 red peppers
- 4 red onions
- 4 teaspoon tomato paste
- 100 gms garlic.100 gms fresh ginger.
- 1 teaspoon salt.
- 2 teaspoons virgin olive oil
Directions : Slice the garlic, ginger, onions and peppers,
put the oil in a (very) deep sauce pan and heat until nearly smoking,
add one at a time stirring for a minute between each:
- garlic
- chillies
- onions
- red peppers
- ginger.
Add 500mls of cider vinegar and the tomato paste and bring to the boil,
put a lid on the pan and remove from heat
allow to sit for 20 minutes.
Put this mix in a blender and blend until smooth
return the mix to the pot and add
- add the lime zest and juice
- the remaining vinegar
- sugar
- salt
Bring the mix to the boil and then lower to a simmer for 30 minutes
Find lots of jars to put it in!
